Double the Pimento Cheese Green Bean Casserole
At HP, we really cannot get enough Pimento Cheese! So when we started thinking about the Holiday Season this year, we began brainstorming how we could season up some classic recipes with our Signature Pimento Cheese Seasoning. This Pimento Cheese Green Bean Casserole is one of our favorites. We make it from scratch, but feel free to substitute your favorite recipe that uses condensed cream of mushroom soup and add PImento Cheese Seasoning (No judging here, because when we are pressed for time we do it too!) . Best of all, you get double the pimento by using pimento cheese roasted pecans along with crispy onions to top the casserole.
Makes, 1 8x8, 2 Quart Casserole
Serves 4 -6
Ingredients
2 pounds green beans, trimmed
4 ounces baby portabella mushrooms, thinly sliced
1 shallot, minced
1/4 cup unsalted butter
4 tablespoons flour
1 1/2 cups half and half or whole milk
2 tablespoons Pimento Cheese Seasoning
1/4 crispy onions
1/4 chopped pimento cheese roasted pecans, chopped
Directions
Preheat oven to 350 degrees.
In a large pot, bring water to a boil over high heat. Add green beans and blanch for 2-3 minutes, until just tender. Strain the green beans into a collander and run cold water over the beans to stop the cooking. Allow beans to drain.
In a medium sauce pan, saute mushrooms and shallots in olive oil over medium heat until they begin to brown, about 5 minutes. Remove from the stove and transfer to a large mixing bowl. Place the sauce pan back on the stove and add the butter, melt the butter over medium low heat. Once the butter melts and begins to bubble, whisk in the flour, continue to whisk constantly until the roux turns a very light brown, 4 - 5 minutes. Slowly whisk in the half and half or whole milk, once incorporated continue to whisk and bring the sauce to a slow simmer to let it thicken. Then pour the sauce over the mushrooms and shallots and add the cooled green beans, mix thoughly.
Then Pimento Cheese it up! Sprinkle the Pimento Cheese Seasoning over the green bean mixture, season to taste with salt and pepper. Mix it all up, making sure to spread that Pimento into every nook and crany. Transfer the mixture to your casserole dish.
Bake for 15 minutes, then remove casserole and top with crispy onions and the chopped pimento pecans. Return to the oven and bake for another 15 - 20 minutes until golden brown and bubbling.
