Tomato Sandwich Squash Casserole
At Hostess Provisions we love our casseroles, especially squash casserole. What is not to love about yellow squash and cheese baked until browned and bubbling and topped with a crispy buttery crust of Ritz crackers? We thought we would take this classic covered dish staple and tune it up a bit with our Tomato Sandwich Seasoning. Tomato Sandwich seasoning isn’t just for making the Best Tomato Sandwiches anymore!
Makes 1, 8x8 casserole.
Serves 4 -6
Ingredients
6 - 8 Yellow Squash, about 8 cups
1 Medium Sweet Onion
2 cloves garlic, minced
4 Tablespoons unsalted butter
4 ounces grated sharp cheddar cheese (1 cup)
2 ounces grated Gruyere cheese (1/2 cup)
2 tablespoons grated Parmesan cheese
1/2 cup Mayonaisse
1/2 cup Sour Cream (1, 8 ounce container)
1 Tablespoon Tomato Sandwich Seasoning plus 1 teaspoon seasoning
1 Teaspoon Kosher Salt
1/2 Teaspoon Cracked Pepper
2 Eggs
1 cup crumbled Ritz crackers
Preheat the oven to 350 degrees.
Slice squash into 1/4 inch rounds and dice the onion. In a large skillet or pot, melt the butter over medium low heat, add the squash, onion and garlic. Saute stirring often until squash is tender about 20 minutes. Remove from heat, and strain the squash to remove excess liquid, then transfer to a large bowl.
Stir in the cheeses, sour cream, mayonnaise, Tomato Sandwich Seasoning, salt and pepper. Mix well. In a small bowl, whisk together the eggs, and add to the squash mixture, gently mix in the eggs.
Spray the cassrole dish with non-stick spray and pour in the squash. Top with crushed Ritz crackers and sprinkle the remaining teaspoon of Tomato Sandwich Seasoning over the top.
Bake in the oven, until golden brown and bubbling, about 30 minutes.
